If you give Brakes Direct your PR numbers they will know which rotors you have. You'll find the PR numbers on the sticker in your service book or in the boot.
That's a good package at a fair price. Personally I'd go for plain face rotors. Get the T3 up front & T2 for rear - without the slots it will be a similar price for better front rotors.
If you give them a call you can probably get it for just under $600 delivered.
Fitting - there's a lot of good general mechanics in Sutho but i haven't a clue who they are. Brakes aren't hard on your model.

Why not try Port Hacking Automotive (behind Sandhurst Foods) - they do truckloads of VWs. Parso Rex on this forum runs a tuning business out of the same building.
RW King in Penprase Lane Miranda has been there for years and has a good rep ( a friends son-in-law works there).
- I'm not sure of their VW experience though.
Shire Brake & Clutch in Taren Point should know what they are doing.
Keep in mind that many mechanics aren't thrilled about fitting customer supplied parts (various reasons not related to reduced profit on a job) so you need to make sure they are OK with that beforehand.
I'm at Carss Park & get my work done at Camden GTI in Campbelltown (I work out there). It's not a huge drive there now that the M5 is 3 lanes. It might be worth your while to go out there & hang around Campbelltown for 3 hours while they do the job. Go to the movies in Dumaresq St or something?

One of the issues with fitting customers supplied parts is that some public liability insurers, who cover the workshop/repairer, won't cover it. Me personally, my insurer is fine with it, and I state it clearly on the invoice that the customer has supplied their own parts.
I was never keen because it:
Took a chunk out of my margin (we had huge buying power & could buy brake parts for beans).
The parts were invariably wrong or fitted badly and you couldn't get an immediate replacement.
If the end result wasn't 100% there was always the argument as to whether the parts were at fault or the workmanship (and who would pay for the rectification).
Customer parts just add a layer of complication that you don't need.
If a customer suggested they supply their own parts I would often ask what they were paying and give a discount on our "house brands" so that I could warrant the whole job rather than just the workmanship. The internet didn't exist then ( a St.Bernard delivered the parts in winter) so the prices didn't vary as much as now.

No, I haven't noticed that one. There's an old guy around the corner with a fantastic T-bucket hotrod & a gold Camaro; a couple of vintage cars up on the ridge but that's about all the old stuff that comes out of the garage. Plenty of recent blow-ins driving C63 mercs & M3 bimmers

for street oriented i think you can't go wrong with remsa pads and fremax discs.
for performance oriented, QFM A1RM and DBA T3 4000 discs would be good.

yes.
remsa pads should be perfect fitment for mk6 R calipers.
qfm a1rm.. the ones i got were more for mk5 r32 calipers (slightly different pad retainer clip design) so i took them off and fitted stoptech street performance pads instead. i think there should be another part # specific for mk6 R / Scirocco R.
i had good experience with stoptech and the current stoptech pads i have in the R have not faded on my driving limits at QR / Lakeside / Morgan Park with fresh Penrite Racing Brake Fluid
These are the dba t3 4000 discs (part # DBA42808S, made in australia) for the fronts and dba t2 (made in china i think but cheaper) for the rears, that i fitted to my R:
