The GTI and R will be virtually identical inside. The only differences will be minor trim, fascias etc; seats and sizing will be the same. The R is unlikely to feel any more special than the GTI.
The A3 and S3 will also be very close, but as Paul has suggested above, check out the seats first. The standard (sports) seats aren't particularly sporty (less so than the Mk6 GTI), but the performance seats do have some decent lateral bolstering that may present issues.
