I think work out the different styles you're looking at, and then hit the Golf friendly specs in to google and see what you can find - you may end up finding something you like. Ultimately though I would be looking at something 8.5 wide with a wider tyre (255+? i.e. like RS3 spec) to maybe curb a bit of the traction issue.
Going much beyond that will give you the looks, but undo the work you're doing on looking for performance.
I have found some rims that I used to have on my S15 and they come in 18x9 ET32. Will need to see what kind of tyres I can fit on it and then think about lowering car after that. The reason I went with 9 is that they will still have a deep dish compared to 18x8 ET37

Even after market 18s with a fairly conservative fitment can start to look a touch odd on the GTI (over time I felt mine needed a touch more lows to finish the look), but I think it comes down to the style of wheel.
