On my previous two T5 vans I've had the factory tow bar fitted by the dealer and it's always been a neat job. I recently had the factory tow bar fitted to the new T6.1 again by the dealer and honestly it looks like canine excrement with bits of bumper and underbody plastic hacked away to make it work. Can anyone share some experiences/photos of their T6.1 fitments so I can confirm if this is poor workmanship by the dealer or poor design from Volkswagen please?

I think you might find the T5 bumpers were a different height and if it was like both of ours required no cutting of the bumper like your T6 shows they had to do . Now I will admit the towbar fitted to ours was a VW part made in New Zealand !! I did have the towbar fitted by our local VW dealer to our first T5 back in 2005 they fitted the factory wiring harness at the same time . When we bought the T5.1 update in 2012 I removed the bar from our old van and bolted it straight onto the new van , the harness was no good as VW changed the whole system so it would not work but I wasn't going to fork out $700 plus coding to get the correct wiring loom . $120 later I picked up a ready made harness from Speedy Towbars which I fitted myself , best part NO coding and no worries about using LED lights on the trailer . OK OK the purist would say that the proper harness will adjust brightness of the vans rear lights when you connect the trailer in but to me no big deal . Ten years on that $120 kit is still working perfectly . Maybe because your new vans rear bumper is different they also had to cut away underbody panels albeit roughly to bolt the bar onto the van .
