Modified the originals check out this post from one of my other projects .Insulating T5 "Another wet weekend and someone is getting a makeover"

The leaking head gasket is not a common fault. Get a second opinion on that.

What else could it be though?

They first thought it was the Welsh plug and thermostat leaking coolant but it wasn't.
Intermittent coolant leakage seems like headgasket to me but then again I'm not a mechanic

The water pump, EGR cooler? Take it to good specialist for a second opinion.

VW specialist can run tests on the water in the cooling system for exhaust gases, pressure build up in the cooling system. Could be water pump and or thermostat as well.
