I would wait for Umai to reply he is a tech with VW experience I am a lowly sunroof fitter come home taught mechanic , sounds strange with the operations mentioned causing the sound . How about the steering rack or power steering pump have you had an eyeball on that ?

After much work and little sleep there is a new version of the forums running on more powerful and recent hardware as well as an upgraded software platform.

CVs still clicking after being replaced

If the driveshafts are exchange parts from an aftermarket supplier, they may not be up to standard.
One of my T5-owning customers organises his own parts, and at one stage we sent a driveshaft back twice because it was no good, after they apparently refurbished it. We ended up putting a new CV on it ourselves.
Check for axial play in the CV, by rotating the driveshaft back and forth by hand, whilst holding the CV stationary. A small amount of movement is ok, but if you're getting several degrees of rotation, I'd say the CVs have had their day.'07 Transporter 1.9 TDI

The CVs were aftermarket. CVs not up to spec does make sense given my setup does push them to their extreme. The LCAs and bushes are also aftermarket. It's entirely possible that the bushes have more give in them than stock ones, which would also contribute.
