From memory the Golf has an option in the setup menu in the MFD to enable/disable the deadlock. Again from memory it only swaps the default action of one/two presses of the remote button.
ie:
1 Press of the button = Deadlock
2 Presses = not deadlocked.
Assuming the Passat has the same functionality, check the setup menu (or the manual).

You can also activate /deactivate auto locking doors when it gets to 15kph A feature I hate as being dangerous and yes I know the doors are SUPPOSED to unlock automatically in an accident.
