New to Amaroks so patience if this has been covered. Looking at upgrading the rear end and wondering if anyone has done a Toureg IRS conversion.

Not sure why you would want to do that. There are a lot more interesting things to do to a TSI300 ... Agree, seems like a lot of effort for not much gain.
If you want better handling you can put lowering shackles in the rear to level out the ride, I had them in mine and it certainly helped it steer better.
Whiteline also do a rear swaybar kit and a thicker front swaybar for the Amarok too.
