Is my car suppose to turn off when you press the brake down?
I don't think the auto stop/start function is supposed to start back up again just because you have released the brake. Mine will start the engine up if the car in front moves off soon after I have stopped, but I think that is the adaptive cruise control doing that.
Sensitivity to brake pressure seems to vary from car to car, on my R unless I am extremely light (feather touch) on the brake pedal it will switch off, and often switches off before I've even come to a complete halt. If I wiggle the steering wheel even slightly it will start up again.

Yep. My GTI turns of and will coast to a stop as I apply the brake behind traffic. If I'm first at the lights it seems to wait until I stop completely.

Idle, you might be right about it restarting because the battery voltage is getting a bit low ( I think mine has done that a couple of times, but not related to pressing/releasing the brake pedal).
These days I keep mine disabled all the time (switched off immediately after starting engine). If I know I am going to be stopped for a long time I usually switch it back on again (unless it is really hot outside, then I want the a/c to keep cranking out cold air).

It will restart for a number of reasons without releasing the brake pedal or the car in front moving off - battery charge too low, too much drain on the system (eg charging a mobile phone), cabin temperature going too high/low.

As explained regarding the brake pedal above, Stop/Start is linked to the voltage of the car. The car will turn off every time you stop at the lights or in traffic, except when you have the air conditioning on.
It's a feature that annoyed the living hell out of me so much I decided to code the voltage setting right up so it wouldn't activate. I couldn't be bothered having to press that button every time I started the car.
