Can anyone please explain to me why most good looking aftermarket wheels for golf mk6 particularly 17X7.5 come in 45mm offset as opposed to 50/51mm OEM offset, is it because they are cheaper to produce than 50/51mm offset or they fit or look better on the golf?

probably because it's a slightly more aggressive stance & it allows them to give the appearance of a dished wheel.
17x7.5 ET45 is an OEM fitment on a lot of VW group vehicles AFAIK.
