Looking damn nice, I'm amazed at just how clean it's coming up. Good to see another member not afraid to take to their car with some tools and tear it down 
Aircon is likely to be the compressor, don't get a second hand one, get a rebuilt one or a new one. It's one of those jobs not worth doing twice. It's also worth looking at the condensor and the sensor attached to it while your there, otherwise a quick flush of the system and you should be set.
Airbag could be something as simple as an error code that hasn't been cleared or a missing passengerside airbag or a busted connector in one of the two. You need to get a code scanner onto it so help narrow it down. While it's dodgy as all hell it's easy enough to disconnect the warning light by popping it out and unplugging it
Cruise control, much like the central locking is a vacuum system. The pump is in the passenger side fron quarter behind the washer bottle. First things fist I'd check to see if you can hear the relays clicking as expected when it's turned on and you try to set it. It should also click off when you touch the brake or clutch. If the relay is clicking it's an air leak you need to hunt down. It my case I was lucky and it was easy(ish) to get at and fix.
Since your happy to pull things apart, installing the required cabling for a nice aftermarket system shound't be an issue. While brands are personal choice (I'm a Pioneer fan myself), a small sub, a decent set of splits in the factory locations and a small amp to drive it all can improve the sound 1,000% without going totally nuts.
