So good news. All the glass (except windscreen) is in the car. Such a PITA but with the much appreciated help from Marc, we got it done. Just need to get my rear beam back from the powder coaters (hopefully today) and the car can be put back on her own feet for the first time in 4 months.

Lots of work but its the best way to learn.
Your 2 door reminds me of your grand mothers Golf from many years ago..
Give me a yell if you need any advice etc.
30 years of playing with VWs may be of some use to you.
Currently in the middle of converting my '67 Kombi to VR6 power and hoping to have it at DOVW
this year..

Update. Engine fired for the first time today which was mega cool!!! Sounds so so SO good!
Just a few quick questions.
When I first started the car, there was fuel leaking out the front of the carb (the trumpet side). Initially it was only on the carb feeding pistons 1 and 2 so I took the cap off and fiddle with the floats and needle valve. But the same thing happened on the other carb the next time around. Could this be because I was running on the choke for quite a while? (mainly because I can't start it with the accelerator circuit yet). Has anyone set up twin dellortos on a 1600 or 1800 before that can help me out?
Second thing, my coolant temp gauge hits the red as soon as I turn the ignition on. I've read this can be because it is shorting out across the temperature sensor?? But even completely unplugged it still does the same thing. Might have to check through my connections in the wire tuck to make sure it's not shorting out. What's the voltage meant to read at the sensor when the engine is cold and when it's hot?
Lastly, my radiator (the barina one) isn't getting hot when the engine is running. The "top" hose (coming from the head but is actually going to the lower spout on the radiator ) is hot but the "bottom" hose (again, is really the upper hose but goes to the thermostat housing) is still cold. I'm fairly sure that the thermostat would've opened at that temperature (and it's brand new) so my only conclusion is that there is an airlock as the water exits the radiator. This is because the upper radiator outlet points upwards, meaning I need to put an elbow in the hose, possibly catching air as it exits the radiator. Anyway, I put a small bleed screw in at this point so hopefully next time around it works a little better.
The hose in question can be seen on the far side of the carbs in this pic.

Congrats on getting it running and almost finished. Wish mine was as advanced.
Sounds like the choke is causing the overfueling, especially when it's being used for so long so nothing to worry about. When the engine is used it will suck more air and the fuel will go into the engine, not spill out the trumpets. Might need to check it though when you've got it idling without the choke to make sure it isn't leaking because it could cause a fire.
Check that your temp gauge isn't triggered by earthing it. It could be one where 12v moves the needle to cold and less volts (as it earths more) moves the needle up.
Here's my setup with the Barina radiator. Note the pipe to the water reservoir and where it comes out of the radiator - up high so it reduces any air in the system. Still not perfect because the radiator pipe on the drivers side can hold a little bit of air but it obviously works because Michael ran the car like this for months. You've got yours plugged up which is not the way to go.

Well well well guess what's the latest. I drove my golf for the first time since the engine swap!!! Things are looking like they'll be ready for dovw which is the best news I could hope for.
As for the fueling issue, it's all sorted. After some reading about my carbs (DHLA40H) I noticed that the idle jets I put in were far too small, so I swapped them out and boom, running like a dream. Still needs a bit of tweaking to get it comfortable but it's good enough to drive at this stage. Also, a fuel pressure regulator helped with the overfilling of the bowls.
Cooling system has been rectified. My temperature gauge was shorting out at the dashboard end so that was an easy fix. The air bleed I put in the upper hose seams to have worked as they both get hot when the thermostat opens. Fan fuse was blown, but should be all good now assuming that the thermo switch works.
New windscreen is going in this morning so I should be legally allowed to drive her again as of tomorrow!!!
Next up, make some new door cards and put the rest of the interior back together. All before dovw hopefully.
