Welcome to the new look VWWatercooled
After much work and little sleep there is a new version of the forums running on more powerful and recent hardware as well as an upgraded software platform.
Things are mostly the same, but some things are a little different. We will be learning together, so please post questions (and answers if you've worked things out) in the help thread.

does anyone know if this engine is an interference engine?
If the belt hasn't been changed its way over.
I wouldn't drive or run it.
show the video to a service tech with it's dubious service documentation is my humble advice.

All modern diesel engines are interference mate, at that high a compression valves are going to hit pistons, so unlikely it has jumped more than one notch. Sounds like fuel issues with the hunting idle, that happens with air leaks on petrol cars, with fuel on diesels.
See if you can borrow a vag com cable and scan the car, but yeah the advice to source a decent VAG mechanic is a good one. I've only ever heard extra clatter like that when adding some sort of volatile cleaner to the inlet, such as carb cleaner and it pre-ignites.
Possibly a leaky injector or two.2014 Skoda Yeti TDI Outdoor 4x4 | Audi Q3 CFGC repower | Darkside tune and Race Cams | Darkside dump pDPF | Wagner Comp IC | Snow Water Meth | Bilstein B6 H&R springs | Rays Homura 2x7 18 x 8" 255 Potenza Sports | Golf R subframe | Superpro sways and bushings | 034 engine mounts | MK6 GTI brakes |

Sounds a lot like air in the fuel system. Air in the system often results in very retarded timing, as the full injection pressure is not generated and you end up with diesel clatter from fuel igniting during the compression stroke which is leftover from the previous cycle. Always sounds horrible.
Either that or the engine actually has low compression for some reason.... which is likely to be far more expensive to fix.
Any fuel filter service occurred lately?
If there was a valve train issue (with timing belt) i think it would have degraded and destroyed itself by now. 1 notch out is gonna bend valves at 2000rpm, it wouldnt run for long.
Also remember you have a dpf there so you wont see any smoke.Last edited by gldgti; 31-07-2015, 08:59 AM.'07 Touareg V6 TDI with air suspension
