They are probably running coilovers which have significantly narrower springs than aftermarket, which again are narrower than OEM.
Ignoring outer poke, inner clearance is two things, clearing the strut, and avoiding tyre scrub on your wheel well at full lock.

The ones in the US that i've seen are certainly running coilovers, but there's one fella in Melbourne running MK7R springs and 20x10 ET35.
Perhaps the tyre scrub has just gone unnoticed on their part, since there's been no complaints...

Nothing wrong with either there - unlike tigger73 I actually don't instantly see a Ford wheel and think the HF5 sorta suits the slightly rugged Tiguan (more than say a Golf).
I like an OEM+ look, but I don't think I've had an OEM look since putting a five spoke ROH on a VS Commodore in the 90s lol.
And my thoughts on Suzukas are well known..

Nothing wrong with a set of Vossen flow formed wheels.
Personal preference but I like the HF3. The HF5 reminds me of Ford XR-5 wheels

you know, it's not even the worst comparison - i've got a mate who refuses to call the HF5's anything other than 'vacuums heads'... personally i don't see it.
Awesome thread and keen to see some more aggressive setups. Looking at getting 21x10.5 +35 wheels, but the biggest worry is probably the inner clearance to the suspension (22mm less inner clearance with the setup). Just planning ahead so will keeping an eye on this thread 🙂

Yes I believe 10.5" is achievable, however you're running very close to the limits both to the suspension and to poking from the guards. I know some guys in the US are running these types of aggressive setups, however some areas/regions are also a bit less lax in terms of laws for poke.
Fitment may also come down to tyre selection so you may want to end up running a more stretched tyre to gain you a bit more clearance which then questions why you go for a wide rim and run a stretched tyre... Personal preference and the looks you're going for/want to achieve. But you're definitely pushing close to the boundaries of what fits on our cars.
