Apologies if this has been asked before. But will I have any issue fitting 235/40/18 to my stock Austin GTI rims (apart from a small speedo change) ? - going up from 225.

No problems, good choice.
Back in the day the 235s were a lot cheaper than 225s as they were a Falcodore size, but I guess as time has gone on their market has dwindled while a lot of smaller cars are now running 225 18s - but if I recall the speedo correction was only around the 2% mark or less (someone correct if they know or calculate it) and the touch extra sidewall arguably can improve ride slightly.
