We seem to be going in circles.
225/40R18 is the correct size to stay within spec of the original tyres/wheels. But the VW 18" wheels are only 7.5" wide. Having said that, 225 is the MAXIMUM that you can put on a 7.5" wide rim (without going out of spec of most tyre manufacturers specs), so putting a 225 on a 8.5" rim is fine for most tyres (again, check the specs of the tyre you pick)
As I mentioned originally, you could also put a 235/40R18 (which is the "optimal" for 8.5" rims with most tyres), but your speedo will be 1.3% further out. And as Tim mentioned, with the offset that you're selecting, you'd be even more likely to rub.
