It'd be pretty odd if a basic service item like a thermostat was no longer available. In the past I've sourced them from Solitaire (very pricey - thermo and o ring charged separately) and Imparts (about $15.00 last time supplied with o ring).

Name and shame the dealer please, if that's the kind of service your getting from a genuine VW retailer they should be sacked. Effin morons!!! it's get me so upset that normal people get treated like fools only due to the fact that the parts dept a just lazy. i don't know how true it was but that's just what i was told ,its more of the case that they where probably being lazy and didn't really car any way i seemed to of fixed the leak with some gasket goo so i dropped the water today refilled with water again just to be super safe and drove it around all day
tomorrow i will drop the water and finally add coolent and hopefully i dont get a leak any where and all is well again , i have noticed that since the new thermostat and a few flushes of the system that the car warms up much quicker in this cold winter weather

so it has taken 2 weeks but i have finally drained all the water i could out and put fresh red coolant mixed with clean water in this morning , temp gauge is bang on 90 degrees, thermos kicked in, run, turn off, and no leaks that i can see any where.
ill drive it around today and check it in the morning when its cold and top up if required
