Is it just me or is there a noticeable flatspot somewhere between 2600 and 2900rpm? I notice it mainly in 2nd when accelerating in every day type driving (not giving it a bootful). Is this something others have experienced? Anyone got a stock dyno sheet?

It is a known issue with the stock code in the R32.
There have been literally hundreds of threads on the matter since the cars release over on VWVortex in the R32 forum, there is a brilliant FAQ there that I would highly recommend you reading, it will answer 99.999% of the questions you will have about the car and those that aren't answered in the FAQ will be answered else where in that forum or I'm sure one of us who have had the car from new would have the answer to and be able to help.
As mentioned a reflash from one of the reputable dealers will fix the issue for you.

Reflashing to a GIAC s/w fixed the issue up for me.

You don't exactly need the chip. From what I have heard you can fix the flat spot with a software update 3026 or something along those lines, have a look on vortex or Uk-mkiv's or maybe do a search on here.Audi B4 80 Q V6'94 Race Car !! KEGGED

Ok, maybe you need to find someone who works at a dealer that can actually verify this for the R32 so that you have some paperwork to show... not every person in any field is going to know everythingAudi B4 80 Q V6'94 Race Car !! KEGGED
