Yeah I think they get a little less bouncy over time, and you definitely get use to it. you will only need the front aligned as there is very little in the back they can change, and chances are they wouldnt anyway. When you book one tell them its lowered and see if thats okay for them. ive been unhappy with a couple alignments done on mine, so if you know somewhere local that you've heard good things about from vw people or a mechanic or something id definitely go with them over a random out of the phone book. Ive had to show one guy I was paying how to adjust some things on mine before and they still didnt get it quite right. I think some places just get it so the car drives somewhat straight, or straighten up the steering wheel and leave it at that, after my last alignment most things weren't even close to being in spec.
Oh and to answer the adjusting question, id just get it done at your daily height and not worry about it when you drop it. just take note of how high it was and put it back to that same height. Changing just the height shouldnt change things much and wont cause crazy tyre wear, aslong as you dont unbolt anything it should be okay.
