If you need it for a track day they will most likely have some rules, like the extinguisher must be in reach in the drivers position, which leaves you one option... under the drivers legs at the front of the seat.

People often ask me if it gets in the way while getting in and out, the answer is no, you have to lift your feet clear of that part anyway, so chances are you would clear it without any special effort. (I do)
It's only attached to the plastic, but it would have to pull off the entire plastic panel to pull free so while not the *best* mounting option I would have to have a pretty big smash at which point I think I would be in trouble anyway

I thought it had to be close enough for the driver to reach while strapped in, leaving only the drivers foot well, although in your case it sounds a little different. Here are a few pics I dug up...
