What would be a good suspension setup for a mk2 used for trackdays and hill climbs ect?

What specifically do you mean?
Torsion bars? Damper rates? Camber? Spring rates and heights? Tyre pressures?
All depends on the track and wheather conditions mate.
Is it stock atm?

Do you have a budget?
There are plenty of cheap coilover systems on the market which will give you more ability to dial the car in. The more expensive you go the more features/better quality they are going to get.
