Interested to know if there's a massive difference too. To be honest, my brakes are crap and will need replacing soon. More so the rears... Was thinking of just going with 312mm rotors on the front and stock rotors on the back. The 312mm front rotors are a direct bolt on with just new carriers (apparently)...
Are your brakes mk5 r32's or mk6 r's?
If you're going from 288mm up to 312mm then I agree it's well worth it. It's as you suspect just new carriers required to go to the larger rotor.
I did this exact upgrade on my Caddy workvan and the difference was chalk and cheese, you actually feel confident in being able to stop wthout ploughing into the car in front. I went with DBA slotted rotors and Bendix CT pads with braided lines. Increased stopping power with a noticable reduction in brake dust. My next thing to do when I can fit it in around work is to replace the rears with slotted solid rotors with Bendix CT pads for ****s and giggles and also to reduce the brake dust.

They feel amazing compared to the setup I had before. Like I've mentioned I have them set to quite firm until I put the new tyres on. So can't really hammer around corners till the scrubbing issue is sorted.
A GTI rear hatch spoiler would be a nice addition, did this to my Golf, turned out well.
Maybe its just me but I struggle at times to see the difference between our rear spoiler and the GTi rear spoiler - it looks like such a tiny little addition that at adds 2mm extra length. I see it as the biggest waste of money. If I were to add a rear hatch spoiler it would have to be something that's noticeable different.
