I looked into this for my Roc a couple of months ago. 2 local VW dealers, our Audi dealer (recommended for my car's first service as local VW reported to be mediocre at best...) & a non-affiliated Euro car service centre all said they hadn't heard of this 7.5k service. Two of them commented that the car shouldn't need a service at such an early stage & VAG say an oil change should not happen before the sched 15K. When I eventually called our selling dealer in Sydney they said the 7.5K service was "just to check that all was ok with with the car, we were happy with it and they could answer any questions we might have." Seeing as I am happy & have no questions that can't be answered by you guys on here, I confidently wait for the usual 15K service!
Now to just find someone local & reliable to do the service that wont compromise any VW warranty guidelines.....

changed my oil at 7500,being an ex demo model the car has been put through its paces the oil was that thick and i knew the dealership hadn't changed it since it arrived, replaced it with motul 504/507 runs alot better and oil temp is kept at 88 ).
will be installing the forge oil catch can in the next month along with the vwr intake.
oil sludge issue needs to be kept as minimal as possible.

Why the difference? Need I do it? Or can I wait til 15k? If I do - will it affect warranty?
VW owners (myself included) usually have an oil change at 7,500km. Maybe that's why yours is set to that?

VW service centres 'usually' frown upon non-scheduled services - they follow what is in the service manual which I believe indicates 15,000km/1 year service intervals. As long as you follow the service manual, it will not affect your warranty.
