What difference, if any, should I see in my MFD having installed an RNS510?

That's what I have been told too by others, but that's what the dealer said over the phone. I will have to rock up there and try my luck?

I doubt very much that it will be that easy: I know the Canberra dealers are a lot more "special" compared to other states for some reason...

FJ Steve, I haven't yet had the opportunity to have a fiddle using VCDS. Unfortunately I don't know anyone with a cable, and haven't yet taken the plunge to get one for myself.
I have contacted a local VW mechanic however, and they've said they can have a look at the coding as long as I'm aware of what needs to be changed to get things working. That's where it's a little tricky.

As far as the security code is concerned. I was at my dealer this week while they had another go with the coding and replaced a part. I asked for the old RCD510 code and the Service Manager just jumped on his computer and had the code for me in about 30 seconds. Totally painless and free!
Fingers crossed your dealer gets their act together and organises that code for you.

Whereabouts are you atm? I'm in the CBD (finish work at 5pm) and might be able to spare a couple of minutes. Got an appointment later so can't be too long.
Some say he was the Stig... all we know is that he drives a VW Transporter.
