Has anybody got any knowledge or know of somebody who has done this conversion? Car currently runs a fuel injected 1781cc Audi motor with mechanical injection. This conversion seems to be all the go in the UK according to Golf+ magazine. . . .

Custom-Code.co.uk can defeat the immobiliser for an extra £100 over the cost of a chip. Providing you arent going to a big turbo etc that'll be cheaper than going standalone.

I used to be involved in vw golf conversions back in south africa
did a similar conversion /used golf 1V engine & trans with programable management system
easiast way to do this
buy complete front of golf 1V if possible
there is many ways of doing this all depends on what kw u want at the wheels

I am sure the block would fit great but its not transverse so you'd need a sump and oil pickup before you started.

Any 1.8T loginitudinal engine will bolt straight up to your existing RHS engine mount.( I prefer to use a modified diesel mount's as they are of the bigger variety) As Gavin said you need a different sump & oil pick up. Also the intake will have to be modified too.
Using a transverse 1.8T require's a fabricated RHS mount & swapping the hydraulic cambelt tensioner to a 16V type with a stud. Not to difficult to make.
There's a few more thing's to consider but I hope this gives you some help.

Only AEB's with the external water pump will still have the bolt holes for the rhs mount, the later engines have the same internal pump as the AGU engines and no way to directly bolt on the mount.Widebody Cayman S Turbo, 83 ur Quattro

Yeah, they used to do that in the 'olden days'. You don't need all the clocks you can split them up to point.
A number of chipping companies have the ability to defeat the immobiliser as part of the upgrade process.
