There's quite a few companies that do a chip upgrade such as APR.
Some pretty impresive gains, even on stage 1.

Tune
Just a correction PeteR36 has an R36 and not an R and APR don't tune the R36. It is already in a fairly high state of tune for a NA car.
There are a few tuners around that do these but gains are pretty low for the $ spent. They do claim better responsiveness but that can also be achieved through using something like a SprintBooster.
Read up in the Passat forum as there's a few threads there from people that have tuned these.
