Front sway bar doesn't make much difference, you'd only use an aftermarket one to finetune the handling and then you need a few of different thickness or an adjustable one. The rear is the one that makes the biggest change to handling, try one from a VR6.
I'm running hotuning adjustable coils and they are seriously stiff, especially when I team them with 17's. Thanks Guys.
I've noticed that my car is bouncing a lot through slow corners in the front end.
My coilovers are of an unknown age and type. Quite possibly they are stuffed.
Any ideas?
Got a feeling I broke something hitting kerbs on south circuit last month

Sounds like one of the front shocks has gone. Bounce each corner of the car by hand and see how much movement you get, should be rock solid.
Coilovers can be rebuilt but it might be hard finding someone to do it. There's someone on this forum racing a new Scirroco who bought cheap coilovers from China and fitted their own bits inside to make a really good shock but dirt cheap. Might be worthwhile contacting them.

This is the bit that impressed me.
Over the years and many builds we have tried all sorts of suspension. What we have done with this car is use some cheaper shocks from China, which have very good build quality for the housings and swap the internal seals and springs with our custom requirements. This gives us a great shock at a fraction of the cost.
