If that's the case either 15+20mm or 20+25mm for stock height
20+25mm or 25+30mm for a mk4 with 40mm drop
That's all personal opinion though, check a offset calculator to see what works for you compared to your curreent wheels.

I'm looking at early next year getting pedders lowering springs put in, as I have little need for performance gain so form over function at this stage.
I've read a lot of your post in regards to wheels, you always know what you are talking about, so I'm going to ask to get a set made up at 25/30 probably!
