Not Jets, but WW2 Fighter movie called "Reach For The Skies", about Douglas "Tin Legs" Bader.
"Francis Gary Powers", about the pilot of the same name shot down over Russia in his U-2 Spy Plane.
"Firefox", Clint Eastwood movie.
I know of heaps, and have heaps at home, so I can't really help you out any further ATM.

Firefox with Clint Eastwood is about a fictional plane yeah? Still a decent movie though. Love it how the Russian pilot salutes Clint for recovering his plane from some crazy spin and then they continue to fight!

"James May at the Edge of Space" is an AWESOME documentary about the U-2.

By the way, I have started watching Band of Brothers, whilst it's not strictly about planes the story and sound effects are awesome.

havnt scene it in years and hence cant rate it but i think theres a movie out there called "iron eagles"

Watch this. Operation Red Flag in HD. it was an Imax video and made really well.
