Thinking about buying some of those camber shims (1.5deg or so?) to tuck the rear wheels in a bit more...anyone got any feedback on using them/tyre use etc?

I'd say camber shims, one section narrower on the back and coils like you are planning and you'll be able to get that sucer down and looking more perfect than it already is
Tyre wear will be increased on the outside, wear it is noticeable.
One might suggest you not sell the GTI wheels and tyres if you run these out hard and quick. Though I can imagine it getting thrown around TOO much as it is so you may still get good life out of them...

The little beastie got detailed tonight. My goodness was it overdue...anyways, powerfinish on a blue edge pad, followed with lime prime on a white festool finishing honeycomb pad, and then washed and topped with aquawax (for now, until I have the time to do sealant + dodo wax).

I managed to get about 95% of the wheel-arch lines out of the paintwork, and I'm fairly happy with the result so at least for now the arches are staying off.. (you read correctly!). I will most likely be getting some GL spec strips and the endpieces to fit on, as they are the same thickness and it will look much better.
