Not sure about the mirrors but probably not given that the switch is disable once to get to the point where you are ready to lock your car. I.e. turn off the car, take the key out of the slot and open your door and the mirrors won't even fold with the switch.
Rain sensor is always on. The first wiper setting (one click up on the right hand stalk) is where it has to be for the wipers to come on and go off automatically though. You can set the sensitivity on the same stalk.
If you want auto wipers as you drive along then as Rocket says above.
If you want your windows (and sunroof if fitted) to close if it starts raining while the car is locked then depending if you have the full screen display you can set it yourself in one of the menus (your owners manual tells you all about this stuff).

If you want your windows (and sunroof if fitted) to close if it starts raining while the car is locked then depending if you have the full screen display you can set it yourself in one of the menus (your owners manual tells you all about this stuff).
Maybe on your Skoda or the MY10 Passats, but my 09 doesn't have this option and I don't think the MY08's and before have it either. I think it needs to be VAGCOM'd.

That's surprising, I know it is available on Golfs that have the full-height screen (ie the panel in between the speedo and tacho has changeable text in the top half as well as the bottom half, the half-height only has text in the bottom half, while the top half has warning lights only).
Seeing as Passat R36s are a (much) more expensive model I expected they would all have a full height screen, and if they had a full height screen they would have this option available (IIRC it was hidden away in some obscure set-up menu, so not immediately obvious when you are just fiddling with the std data item display).

I've been through every screen and option on my MFD and there is no rain sensing auto close function. Nor do I remember reading about such an option in the manual - I can adjust the brightness of my footwell lights (which comes in very useful ), but a rain autoclose function does not exist.

I'm like you though, don't trust leaving my windows down or sunroof open in case some little turd decided to spill a thickshake through the sunroof on a stinking hot day....
I left the sunroof tilted open in my CC on a 35+ day just to keep the thing a bit cooler while I was away from the car for a short while.
Came back to the car, started and drove off when I was startled by a scream from my passenger who was pointing at the sunroof.
A huge huntsman spider had decided to climb in the sunroof aperture while we were away and was happily sitting on top of the sun blind.
It was fun getting him out too as there is very little access to the space without sliding the sun blind back and that wasn't an option while my semi hysterical passenger was in the car.
