Does the Golf have a defeatable TC/Stability etc.?
From what I understand there is a button to "disable" ESP, however it does not fully disable this function. It basically changes the point in which ESP kicks in. It will let you throw the car around a bit more but if you are about to lose it, it will kick in.

I disagree. My understanding is different to Christopher's although I could well be wrong.
Pressing the ESP button only disables the TCS (traction control) component of the ESP system.
From VW SSP374 Traction control and Assist Systems "A button in the dash panel can be used to disable the ESP/TCS function. In certain vehicles, e.g. the Tiguan, only the TCS function is deactived. "
I guess it depends if the Golf is one of the certain vehicles. From my observations it only obviously disables the TCS in my TSI118.
From a safety point of view it sort of makes sense that the only thing an average Golf driver might ever need to disable is the TCS.
You could pull the ABS fuse to disable the entire system but the car wont start and from memory I seem to recall when I last did it the instrument cluster remains dead.

Logger... I think I was too unclear... Sorry, when typing, in my mind ESP ='d TCS, reason being is that looking in the Golf GTI booklet, it doesn't differentiate between ESP and TCS, it meantions that the ESP can be deactivated but I assume that they are grouping ESP and TCS as one, hence my understanding is moulded around this... apologies for the confusion..
