Any good quality seat covers with a lining should do the job I bought some 25 mil sheepskin seat covers which fully lined ,had them on for 4 years no sign of wear at all .
is there any way to protect the front seat outer wings wearing out from getting in and out?
or is there an after market seat cover available?

Long and short answer: Nope.
Covers available but the bolsters will still be subjected to compression and twist when you get in and out so will still wear.
Less of a problem for the sports seats in the GT and jetta 2.0 TFSI as the bolsters are significantly smaller than the GTI.
The only way you can really do it is be skinny or fit and not a fatty and lift yourself in and out avoiding twisting the side bolster (use the A pillar or door frame).
I also found you can lift and rotate your leg and position it between the wedge between the bolsters where there is hard plastic and the seat height adjustment. Then you can hoist yourself out using that leg, again you will be mainly compressing the foam not twisting it as much.
