225/40/18 should be fine. Will have a small amount of a stretched look on the 8.5 but nothing huge. Depending on how low you are you may have to do the screw mod (I haven't needed to do this but I'm only lowered about 25-30mm)
Perfect offset for the jetta too. (I run the same 8.5 et45
Platinum Grey mkV Jetta turbo, Viezu motorsport map, GT-CX 18", lowering to come
When I first fitted my 18 x 8 alloys with 45 offset I fitted 235 x 18 x 40 tyres to put a little more rubber down and they rubbed under the guards. I then fitted 225 x 18 x 40 and the rubbing stopped. Everything I read about fitting 235's indicated that wouldn't rub but they did!
Before you buy tyres, check the specs. Some tyres are wider than others for the same size. You may get a 235/40-18 in one brand and a 225/40-18 in another may rub. tirerack.com is good for doing research when you shortlist your needs. I know my Pirelli's are narrower than a Goodyear for my size after reading the data.
