Ok I think this is news (not hugely exciting though) for those with dealer-fitted towbars. My understanding from previous posts has been that the owners manual describes the rear parking sensors disabling when a trailer is connected to a factory-fitted towbar. From posts I've seen I don't think it's ever worked properly for anybody and some have pointed out the towbars here are all dealer-fitted which may explain why it doesn't. Well after the servicing guys have played around twice, my rear parking sensors now auto cancel when a trailer is fitted and my RCD 310 even shows a picture of a trailer behind the car! Should've taken a photo but forgot, you'll just have to believe me for the time-being. 
Story: the sales chap when I picked the car up said the rear park sensors should auto cancel with a trailer (was dubious after knowing the posts on these forums). They didn't. First fix by Servicing disabled the whole sensors althougher but with a u-turn and another half an hour, they said they got it sorted. That was a fortnight ago and I haven't had a chance to check. Plugged a trailer in last night and viola it works! On my RCD 310 there is even a picture of a trailer behind the car where the distance bars were. And because my Jetta has front sensors, they don't cancel and still work.
The only slight point of confusion is my Jetta was a factory order (with a towbar requested) however the servicing guys have told me the Best Bars towbar and electrics was all fitted via the dealership here in Australia.
I have got no idea what the Service Dept did in terms of coding but it can be done potentially for everyone in the same boat. If it is helpful for anybody I can tell you what any of my codings are via my VagCom if you want (it'll have to be later in the week as VW is picking my car up today and returning it in a few days to fix recurrent probs with headlight wiring and door seals).
