If you wish to do extra oil and filter servicing, you'll need a huge socket to undo the top of the oil filter housing. It's a 32mm on the MKV, not sure on the MK6. It's a big un.
Most of the screws in the golf are Torx, so you'll need a decent set of Torx drivers. You can get short penknife ones from supercheap, or a nice set from bunnings, but it's a bit dear at $50 odd. I got a nice long set of Kinchrome ones from my local auto shop at $30 odd. Invaluable.
Those are the only specific tools I can remember buying, but I had a lot of tools already, so you'll need the usual screwdrivers, sockets, shifter, pliers etc etc. If you are a bit light on, I'd suggest you wait till a public holiday etc when Supercheap have those big sales, and go stock up from their premium range. It's amazingly nice stuff, I've yet to bust any of it, and by god I try!
I'll agree with cogdoc that the thing I use the most are Torx drivers. I picked up a nice little Stanley swiss army knife type one at Bunnngs for relatively cheap. I have 23 torx screws holding on the front bar alone!
An led workshop lamp is always pretty handy too as it can be hard to see a lot things so being able.
Also as per cogdoc I had a lot of things like screwdrivers, pliers, shifting spanner (), multigrips, socket set etc already which are occasionaly needed.
Oh one last thing is a small flexible magnet on a wire or something for when you drop a screw or clip or similar down into the engine bay and for the life of you you can't get your hands down in there to get it.
If your mods also include suspension, you'll need some XZN (or 12 point or triple square drivers) too. Specifically 6mm, 10mm & 14mm. Also the strut spreader tool is handy.

Do you have any tips on where I can get a good set of trim removal tools?
I got mine from ebay USA. I couldn't find anything locally, paid $30 or so for 2 x kits with total 7 or 8 pieces and 5 days later they arrived safe and sound.
