So i went to drive just before and the coolant temp red light was flashing. Turned it off and parked, popped the bonnet and the expansion tank was empty. I'm in Phillip Island at the moment so don't have coolant on me, filled it with water for the 10 min trip to town and I found a leak to the right of the engine where an orange plug was loose. The plug had electrical cords attached to it, so I assumed it was to activate the warning lamp. I plugged it back in, filled it with water and it seemed ok, on the way back from getting coolant it popped back out and leaked again. Not sure what to do, does it mean the plug is worn? Do I need a mechanic? Ideas? I would upload a photo of it but I'm on an IPhone and don't know how... Cheers

I am not sure how to fix your coolant problem, but I can help with your iPhone.
Download the app called photobucket, create an account, then upload the photos from your phone using the photobucket app.
Get the "IMG" code from the photo/s you have uploaded and put it into this text box to reply on the forum and it should work.
Hope this helps.

those sensors all have clips that hold them in place. Is it possible the clip is missing so its not staying in place?

Looking into it more, I found a clip that is broken. Here are a few more pics. And I don't think it'd need a thermostat replacement, it looks like it's just the clip.
This is the clip above.
This is where the sensor connects. The plastic clip fits into the slit to hold the sensor it place it seems.
I still need to get home, bit over an hour and a half from here and I don't assume that anyone on Phillip island has some random Volkswagen clip. Any ideas of what I can do?
The next photo just gives a bit more perspective of where it is that I'm talking about:
