My approach would be to keep undoing bolts 'till the clutch comes out, put a new one in and do all the bolts back up.
I might have skipped a few steps there.
You'll need new fly wheel bolts as well as the disc and you should ideally replace the rear main seal as well which will require new pressure plate bolts. If you're being super thorough you'll do the clutch release bearings too.
It's not too hard, just a lot of heavy lifting.

Doesn't have anything on clutch that I could find however.
I've done a significant amount of mechanical work in the past, but my experiences with VW so far have been a bit trying to be honest!
The broken off bit of the clutch cable guide at the pedal end (at the top), and the subsequent attempt to remove the bracket, which seems to be the first part of the car that is assembled? The rest of the car seems to be made around it! I ended up welding it back up in situ, but it wasn't the most fun I've ever had!...
Then the self adjusting clutch and the resetting of that and the location of the engine ECU and... hehe
So I thought I best get a guide / manual for the clutch before VW threw me another curve ball I wasn't quite expecting!
Once u get the gearbox out then its easy peasy, the crucial torque settings are 60nm + an extra 1/4 turn for the pressure plate bolts and 15nm for the flywheel bolts.

Uhhh...dude, isn't it the other way around? lol..60Nm + 1/4 turn for FLYWHEEL bolts? then 15Nm for p-plate bolts

Flywheel has been surfaced, new rear main seal installed (85x105x10mm, ID,OD,W for reference), will pick up new clutch kit today, and if the gods permit reinstall at some stage!
