I just got some new 17" rims for the GTi but am a bit messed up for tyre sizes, the car currently has 195/50R15's on it and a move to 17's would require the profile to go down by 20 ie 195/30R17. trying to find a 30 profile tyre for a 17" rim is driving me nuts. has anybody used a 40 profile tyre and if so has it messed up your speedo?

No such size as 195/30 you could try 205/35 plenty of those about.
17"s are a bit big for a MK2 so it will put your speedo out as they are 3" bigger than stock. -
Check with Ausgolfer, he's currently running 17 inch wheels on his mk2:
