Hypothetically, if one of my friends who has a 91 Golf cabriolet 1.8t project and had managed to lose the key completely - it was march when I, erm he, last used it.

What are the options in terms of a replacement - I have no spare but luckily the car is still unlocked. But please help because its really stalling my project!

mk1 golf lock set | eBay

You'll be ok as long as you can access the inside. You need to drill the ignition lock to replace the barrel, there's a little release pin in the lock housing. The boot lock is a bit different but you can make that work too.

I'll tell you over the email/phone how if you want.

Assuming you have a matched set of locks you can have a key cut to code.

The key code is on the inside of the door handles.

If you take the entrie door handle to a good locksmith (not a booth in a shopping centre) they will be able to cut one to code.
