VW: it aint just a car, its a way of life There are few things more satisfying in life than finding a solution to a problem and implementing it

Your engine is badly earthed and you have fused the needle return spring.
Common issue. When there is no other earth on the motor the only return path for the current is up the speedo cable. Mechanics often blow up speedos this way if they've had the box or motor out and forget to re-attach the earth cable properly.
You're going to need a new speedo. You also need to fix your engine earthing first.

Same problem! Your clutch cable is acting as the earth return. It's acting like a big switch when you engage the clutch and disconnecting the earth to your motor, at which point all that juice shots up your speedo cable instead.
You need to fix your earthing!
There should be a cable from the negative of the battery to the chassis and the gearbox mount. I reckon the chassis or gearbox connection is missing.

Years ago I worked in a Jaguar dealership. We had an XJS V12 in for head gaskets and the mech forgot to refit the earth cable.
The owner picked up the car on the friday arvo and pulled onto the highway in peak hour traffic, booted it to get into a gap. Those cars had stacks of torque and the motor earthed through the accellerator jamming it on full throttle! Big crash!!!
Never undereastimate the earth cables on cars.

Doesn't surprise me. I've seen aircooled beetles arc weld away the back of the fanhousing where the accelerator cable passes through too. People forget about the gearbox earth strap on those all the time.
