Because I like closure, I thought that I'd post an update on this problem.
After receiving much useful advice from forum members that led to the elimination of most other possibilities, I reached the conclusion that I DID have a faulty head unit. I managed to find a friendly local mechanic (thanks for the excellent recommendation FJ Steve) who arranged for me to temporarily swap my head unit with that belonging to one of his other customers. The result - his head unit showed the RVC working correctly in my car and mine showed the same problems when installed in his vehicle.
I bit the bullet and ordered a replacement RNS 510 (the T unit with SSD) from VW Central. Good service from them - Dean called me up to discuss an enquiry email I sent him and we talked through all the possibilities.
The replacement unit arrived and was duly installed in my car. I had to do a bit of farting about with the coding (it seems you have to enter Shop Number coding and can't just use the VCDS 00000 000 00000 defaults without a module showing up as being uninstalled). Fortunately a bit of Googling of the Ross-Tech site picked this up for me, I made the changes and I gave the new unit a quick reboot.
Started the car, stuck it into reverse and after a moment of hesitation, heart in mouth, the RNS showed a working reverse camera for the first time in several months. Yipee!
