Generally speaking, the insurance company will tell you "as long as the car is roadworthy, you're covered".
This is true, to a certain extent. If a "defect" that rendered the vehicle unroadworthy caused an accident, then you wouldn't be covered.
If a "defect" didn't contribute to / cause the accident, then the company cannot legally deny the claim. Which doesn't mean they won't try. The test is essentially "would the accident have been avoided/avoidable but for the defect?"
Just go with Shannons, as long as you have the mods listed on your policy no issues at all. NRMA and GIO were almost twice as expensive when I checked it out. They definitely don't like modified cars.

A lot of insurance companies won't insure modified cars so definitely best to talk to your insurance company. Nothing worse than paying all that money only to find out that you're not insured.
I went from Allianz (who don't insure modded cars) to Shannons (who do) and although I'm paying a little bit more I've got an agreed value (rather than market value) and they'll include all my mods on the policy.
I'm with NRMA, if i decide to bluefin my mk6 gti, will they still insure it? How much will the premium go up by?

I'm looking at NRMA right now. Very easy answer - they do insure cars with modification, with no additional premium (beyond that associated with the increased value of the car). The info below is listed:
"The amount we agree to insure your car for automatically includes any options, modifications or accessories that are attached to the car.
Listing these items is not required but the agreed value of the car should include an estimated amount for their value.
What is a modification?
It is an alteration to the standard body, engine, suspension, wheels or paintwork of your car which may affect its value, safety, performance or appearance."

I recently got my MK6 GTI ECU done by APR. I'm also with NRMA. The other day I called them to confirm how they deal with modifications. Basically, the car is covered as per the agreed value - there is no need to list the modifications. Because of this I increased my agreed value up by $1000. Since i have approx 4 months left before I have to renew the insurance I was told that the difference in premium i had to pay was $5 something. As this difference was so small NRMA just increased it for free.
