First thing in the morning the dash creaks and chatters until it all heats up.....drives me nuts and just know I'll be told there's nothing they can do about it.

Cheap dash creaking noises.

Mine had a creak where the silver part meets the black part of the dash, immediately behind the left hand side of the steering wheel below the driver instrument cluster. I discovered it was here when driving along a straight stretch of freeway and started squeezing my finger between all the dash joints. Cut a small piece of manila folder and folded it a few timed then wedged it where my finger was with a screwdriver. Problem solved .... partly - since it looks obvious (to me).
My old mechanic taught me this trick when trying to solve a squeaky A pillar cover in my old Outback. He had some grey slightly tacky cardboard that I think was designed just for this which you can barely see. I keep meaning to contact him and find out what it's called, but I'm sure an auto shop would know.

From Wurth, you can buy rolls of the flocked sticky tape presumably very similar to as used by VAG - eg on the Yeti front seatbelt buckle housing. I presume this is the best for this application.
Our Yeti is tight as a drum. Maybe it's because it warmer in Qld??
Your problem is fixable, will just take a bit of effort. I wouldn't trust a stealer mechanic to disassemble a dash without mangling the plastic parts. Erwin manuals would help.
We had a similar problem in the Polo. Spent a lazy afternoon rapping my knuckles on all the plastic parts listenign for the hint of a rattle. I pulled apart everything I could on the dash and put a thin dense foam weatherseal tape on the edge of all the dodgy bits.
