thanks for all the replies guys, but i'm certain on doing this. Always owned manual cars, very used to checking car isn't in gear. By the sounds of it no-one has done this personally, so can anyone point me in the right direction or should i try posting this up in the mkVI forum?
Thought i would post a follow up for anyone who may be interested. I pulled the footwell apart again this evening and confirmed there aren't any switches attached to either the clutch or brake pedals of the RS. Did a bit more digging online and finally found someone saying that the newer models (didn't specify years, but i'm assuming mk VI golf and FL octy) don't have switches, but instead have proximity sensors located in the master cylinders that read the travel of the shafts in the cylinders.
I'm under the assumption that the single sensor in the clutch cylinder controls both the cruise and start interlock, but as it's buried in behind the firewall with the master cylinder it's too much trouble to get to.
I'm thinking that the only way to bypass the clutch to start is if the facility exists within the VAG-COM software.
