what's everyone's oil temperatures sit at normal/suburban driving vs highway?

Mine sits around 100-105 during suburban and even stop start traffic but around 108-112 deg C on highway. Cruising at 100km/h it is usually 108-109 unless I go up hill then it climbs...

So silly me was reversing and clipped my right hand side mirror on a pole. Lucky for me I was going slow enough to stop and not cause it to break off.
It sits fine but feels loose when you move it with your hand. Found this out during washing.
How can I go about tightening it?
